Directions

  1. Heat oil in a pan, add mustard seeds until they pop.

  2. Add curry leaves, onions, garlic, ginger, and chilies. Sautรฉ until onions are golden.

  3. Add ground beef, cook until browned.

  4. Stir in tomatoes, tamarind paste, sambar powder, turmeric, and salt. Cook until tomatoes soften.

  5. Simmer for 15 minutes. Reserve 1/3 for the next day.

  6. Cook rice according to package instructions and serve with masala.

  1. Melt ghee in a pan, add onions and cook until golden.

  2. Add peas and cook for 3 minutes.

  3. Stir in reserved curry, coriander, chili powder, and salt. Simmer for 10 minutes.

  4. Serve with warm naan and a side of yogurt.
