  • 1 inch ginger, minced

  • 2 green chilies, sliced

  • 3 tbsp cooking oil

  • salt to taste

Directions

  1. Rinse and cook lentils in water until tender.

  2. In a pan, heat oil, add mustard seeds and let them crackle.

  3. Add onions, sautรฉ until golden brown.

  4. Stir in tomatoes, cook until soft.

  5. Add garlic, ginger, green chilies, curry leaves, and spices; cook for 2-3 minutes.

  6. Mix in cooked lentils, coconut milk, and jaggery; simmer for 10 minutes.

  7. Season with salt and garnish with fresh coriander.

Cookโ€™s Notes:

Reserve half of the curry for the next day.


Day 2: Lentil Tamarind Rice

  • 1 cup rice

  • 1 tbsp tamarind paste

  • 1 tbsp jaggery

  • 10 curry leaves

  • 1 tbsp ghee

  • salt to taste

Directions

  1. Cook rice until fluffy and set aside.

  2. In a pan, heat ghee, add curry leaves.

  3. Mix in reserved lentil curry, tamarind paste, and jaggery.

  4. Fold in cooked rice, season with salt, and cook for 5 minutes.

Cookโ€™s Notes:

Hold back 1 cup of the rice mixture for the next day.


Day 3: Lentil Rice Patties

  • 1 cup reserved lentil tamarind rice

  • 1 large onion, chopped

  • 1 green chili, minced

  • 2 tbsp fresh coriander, chopped

  • 2 tbsp cooking oil

  • salt to taste

Directions

  1. Mix reserved rice with onion, green chili, and coriander.

  2. Shape mixture into patties.

  3. In a pan, heat oil and fry patties until golden brown on both sides.
