Directions

Add lentils, canned tomatoes, vegetable broth, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30-40 minutes until lentils are tender.

- 1 bag (10 oz) frozen peas

Directions
- Boil potatoes in salted water until tender, about 15 minutes. Drain and mash with olive oil, salt, and pepper.

In a baking dish, spread the leftover lentil stew. Top with mashed potatoes.
