Directions

  2. Stir in cumin and curry powder, and cook for another minute until fragrant.

  3. Add lentils, canned tomatoes, vegetable broth, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30-40 minutes until lentils are tender.

  4. Remove bay leaf before serving.

  • 2 cups leftover lentil stew

  • 2 potatoes, peeled and diced

  • 2 tbsp olive oil

  • Salt and pepper to taste

Topping

  • 1 bag (10 oz) frozen peas

  • 2 tbsp parsley, chopped

Directions

  1. Boil potatoes in salted water until tender, about 15 minutes. Drain and mash with olive oil, salt, and pepper.

  2. Preheat oven to 375°F (190°C).

  3. In a baking dish, spread the leftover lentil stew. Top with mashed potatoes.

  4. Sprinkle with frozen peas and bake for 20 minutes until heated through.

  5. Garnish with parsley before serving.
