  • 1 onion, chopped

  • 1 tbsp tamarind paste

  • 1 tsp cumin seeds

  • 1 tsp mustard seeds

  • 2 tbsp vegetable oil

  • Salt to taste

Directions

  1. Heat oil in a pan and add cumin and mustard seeds until they splutter.

  2. Add onions, ginger, and garlic; sauté until onions are golden.

  3. Mix in bell peppers, green chilies, and ground turkey; cook until turkey is browned.

  4. Stir in tamarind paste, salt, and cook for another 5 minutes.

Day 2: Turkey Keema Tacos

Ingredients

  • Reserved turkey keema

  • Flour tortillas

Garnish

  • Fresh cilantro, chopped

  • 1 onion, chopped

  • Lemon wedges

Directions

  1. Warm tortillas in a pan.

  2. Fill tortillas with reserved turkey keema.

  3. Garnish with onion, cilantro, and a squeeze of lemon.

Cook’s Notes:

Hold back 1/2 cup of keema for tomorrow.


Day 3: Keema Fried Rice

  • 1 cup rice, cooked

  • Reserved turkey keema

  • 1 onion, chopped

  • 1 red bell pepper, chopped

  • 2 tbsp vegetable oil

  • Salt to taste

Directions

  1. Heat oil in a pan, add onions and bell pepper; sauté until soft.

  2. Mix in reserved keema and cooked rice; stir well.

  3. Season with salt and cook for 5 minutes.

Cook’s Notes:

Hold back 1/2 cup of fried rice for tomorrow.


Day 4: Stuffed Bell Peppers

Ingredients

  • 3 red bell peppers, halved and seeded

  • Reserved keema fried rice

  • 2 tbsp plain yogurt

Directions

  1. Preheat oven to 375°F (190°C).

  2. Stuff bell pepper halves with reserved fried rice.

  3. Place on a baking sheet and bake for 20 minutes.

  4. Serve with a dollop of yogurt.

Reserve 1 stuffed bell pepper for tomorrow.


Day 5: Leftover Bell Pepper Salad

Ingredients

Main

  • Reserved stuffed bell pepper

  • 1 cucumber, sliced

  • Mint leaves

  • Lemon juice

Directions

  1. Chop the reserved stuffed bell pepper.

  2. Mix with cucumber, mint leaves, and lemon juice.

  3. Serve chilled or at room temperature.
