Directions

Day 2: Vietnamese Spring Rolls

  • 8 rice paper wrappers

Filling

  • 1 carrot, julienned

  • 1 cucumber, julienned

  • fresh mint leaves

  • fresh cilantro leaves

Directions

  1. Soak rice paper in warm water until pliable.

  2. Place reserved stir-fry, carrot, cucumber, mint, and cilantro onto the wrapper.

  3. Roll tightly and serve with dipping sauce.

Cook’s Notes:

Use the reserved stir-fry from Day 1 to fill the rolls.


Day 3: Turkey and Cabbage Soup

Ingredients

Main

  • 1 lb ground turkey

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1 carrot, chopped

  • 1/2 head cabbage, shredded

  • 1 tbsp shrimp paste

  • 4 cups water

Directions

  1. In a pot, sauté onion and garlic until translucent.

  2. Add ground turkey and cook until browned. Hold back 1/3 for Day 4.

  3. Add carrot, cabbage, shrimp paste, and water; simmer until vegetables are tender.

Cook’s Notes:

Serve with lime wedges. Hold back 1/3 of the turkey for the next day.


Day 4: Coconut Turkey Curry

  • 1/3 reserved turkey from Day 3

  • 1 can coconut milk

  • 1 tbsp brown sugar

  • 2 tbsp soy sauce

Spice

  • 2 lemongrass stalks, bruised

  • 2 fresh chilies, sliced

Directions

  1. In a pan, combine coconut milk, brown sugar, and soy sauce; bring to a simmer.

  2. Add reserved turkey, lemongrass, and chilies; cook for 10 minutes.

Cook’s Notes:

Serve with rice noodles.


Day 5: Turkey Lettuce Wraps

Ingredients

  • 1 lb ground turkey

  • 2 garlic cloves, minced

  • 2 fresh chilies, sliced

  • 1 tbsp fish sauce

Filling

  • 1/2 head cabbage, shredded

  • 1 bell pepper, julienned

  • peanuts, chopped

Directions

  1. Cook turkey with garlic and chilies until browned.

  2. Add fish sauce and stir well. Hold back a portion for leftovers.

  3. Serve in lettuce leaves with cabbage, bell pepper, and peanuts.
