Day 2: Turkey Potato Curry

1 green bell pepper, chopped

1/2 tsp turmeric

2 tbsp vegetable oil

Directions
- Heat oil in a pot, add cumin seeds until they sizzle.

Add onion, sauté until golden, add turmeric.

Add tomatoes and bell pepper, cook until softened.

Add potatoes and leftover turkey, mix well.

Pour in water to cover, simmer until potatoes are tender.

Season with salt, simmer for another 5 minutes.

Day 3: Nepali Lentil Soup with Curry

Directions
- Rinse lentils in cold water, drain.

Add lentils, turmeric, and water, bring to a boil.

Reduce heat, simmer until lentils are soft.

2 tbsp cilantro, chopped

Directions
- Combine lentil soup and turkey mixture in a pot, heat gently.

Add lemon juice, season with salt and pepper.
