Directions

  1. Heat oil in a pan, add cumin seeds until they sizzle.

  2. Add onion, garlic, and ginger, sauté until golden.

  3. Add tomatoes, turmeric, and timur; cook until tomatoes soften.

  4. Add turkey, cook until browned and cooked through.

  5. Season with salt, simmer for 5 minutes.

  6. Cook rice with water and salt until tender, serve with turkey.

Cook’s Notes:

Set aside 1/3 of the cooked turkey for tomorrow.


Day 2: Turkey Potato Curry

  • 3 potatoes, peeled and diced

  • 1 onion, chopped

  • 2 tomatoes, chopped

  • 1 green bell pepper, chopped

  • 1 tsp cumin seeds

  • 1/2 tsp turmeric

  • 2 tbsp vegetable oil

  • salt to taste

Directions

  1. Heat oil in a pot, add cumin seeds until they sizzle.

  2. Add onion, sauté until golden, add turmeric.

  3. Add tomatoes and bell pepper, cook until softened.

  4. Add potatoes and leftover turkey, mix well.

  5. Pour in water to cover, simmer until potatoes are tender.

  6. Season with salt, simmer for another 5 minutes.

Cook’s Notes:

Reserve 1 cup of curry for Day 3.


Day 3: Nepali Lentil Soup with Curry

Ingredients

  • 1 cup lentils

  • 4 cups water

  • 1 onion, chopped

  • 4 cloves garlic, minced

  • 1 inch ginger, minced

  • 1/2 tsp turmeric

  • 1/2 tsp cumin seeds

  • 1 cup reserved curry from Day 2

  • 2 tbsp vegetable oil

  • salt to taste

Directions

  1. Rinse lentils in cold water, drain.

  2. Heat oil in a pot, add cumin seeds until they sizzle.

  3. Add onion, garlic, and ginger, sauté until golden.

  4. Add lentils, turmeric, and water, bring to a boil.

  5. Reduce heat, simmer until lentils are soft.

  6. Stir in reserved curry, season with salt, simmer for 10 minutes.

Cook’s Notes:

Save 1 cup of soup for Day 4.


Day 4: Spiced Turkey Flatbreads

  • 1 onion, chopped

  • 1 green bell pepper, chopped

  • 1 tsp coriander powder

  • 1/2 tsp cumin seeds

  • 1/2 tsp chili powder

  • 2 tbsp vegetable oil

  • salt to taste

Directions

  1. Heat oil in a pan, add cumin seeds until they sizzle.

  2. Add onion, garlic, and ginger, sauté until golden.

  3. Add bell pepper, coriander, and chili powder, cook for 2 minutes.

  4. Add turkey, cook until browned and cooked through.

  5. Season with salt, serve turkey mixture on flatbreads.

Reserve 1/2 cup turkey mixture for Day 5.


Day 5: Leftover Lentil Stew with Lemon

Ingredients

  • 1 cup reserved lentil soup from Day 3

  • 1/2 cup reserved turkey mixture from Day 4

  • juice of 1 lemon

  • 2 tbsp cilantro, chopped

  • salt and pepper to taste

Directions

  1. Combine lentil soup and turkey mixture in a pot, heat gently.

  2. Add lemon juice, season with salt and pepper.

  3. Simmer for 5 minutes, garnish with cilantro before serving.
