Directions

  2. In a large pot, heat coconut oil and add mustard seeds until they pop.

  3. Add onion, garlic, and ginger. Sauté until onion is translucent.

  4. Add tomatoes, sambar powder, curry leaves, and salt. Cook until tomatoes are soft.

  5. Add cooked black beans and simmer for 10 minutes.

Day 2: Black Bean Curry

  • 1 can coconut milk

  • Salt to taste

  3. Add tomatoes, coriander powder, curry leaves, and salt. Cook until tomatoes are soft.

  4. Stir in reserved black beans and coconut milk. Simmer for 15 minutes.

Day 3: Tamarind Black Bean Stew

  • Salt to taste

Directions

  1. Cook basmati rice according to package instructions.

  2. In a pan, heat coconut oil and add mustard seeds until they pop.

  3. Add onion, garlic, ginger, and green chilis. Sauté until onion is translucent.

  4. Add curry leaves and reserved black beans. Stir until heated through.

  5. Mix with cooked rice and serve.

Day 5: Curry Leaf Black Bean Naan

  • 1 onion, sliced

  • 10 curry leaves

Directions

  1. In a pan, heat coconut oil and add mustard seeds until they pop.

  2. Add onion, garlic, and ginger. Sauté until onion is translucent.

  3. Add curry leaves and leftover black beans and rice. Stir until heated through.

  4. Serve mixture on warm naan.
