Directions

  1. Preheat grill to medium heat.

  2. Mix apricot jam, garlic, olive oil, paprika, salt, and pepper. Rub over chicken.

  3. Grill chicken for 1 hour, turning occasionally, until cooked through.

  4. Toss potatoes, carrots, and onion with olive oil and thyme. Roast on grill for 30 minutes.

Day 2: Chicken and Vegetable Chutney Stir-Fry

  • 2 tbsp olive oil

  • 2 cups rice

  • 4 cups chicken broth

Directions

  1. Cook rice in chicken broth until tender.

  2. Heat olive oil in a pan. Add bell pepper and onion, stir-fry for 5 minutes.

  3. Add chicken and chutney, stir-fry until heated through.

Cookโ€™s Notes:

Hold back 1 cup of stir-fry for the next day.


Day 3: South African Chicken Pot Pie

  • 1 cup reserved stir-fry

  • 1 cup cream

  • 1/2 cup chicken broth

  • 1 tbsp butter

  • 1 tbsp flour

  • 1 package puff pastry

Side

  • 1 lb carrots, sliced

  • 2 tbsp butter

Directions

  1. Preheat oven to 375ยฐF.

  2. Melt butter in a pan, add flour, stir to form a roux.

  3. Add cream and chicken broth, cook until thickened.

  4. Mix reserved stir-fry with sauce, fill into puff pastry, bake for 30 minutes.

  5. Steam carrots and toss with butter.

Day 4: Creamy Chicken and Cornmeal Porridge

  • Reserved pot pie filling

  • 1 cup cornmeal

  • 4 cups chicken broth

Directions

  1. Bring chicken broth to a boil, stir in cornmeal, cook until thickened.

  2. Mix in reserved pot pie filling and butter, season with salt.
