Directions

  4. Mix in tamarind paste, red chili, coriander, turmeric, salt, and 1 cup water.

  5. Simmer for 45 minutes or until pork is tender.

Day 2: Andhra Pork Biryani

  • 1 lb basmati rice

  • 1 onion, sliced

  • 1 can coconut milk

  • 1/2 tsp turmeric powder

  • 1 cup frozen peas

  • 2 tbsp vegetable oil

  • salt to taste

Spices

  • 1 tsp cumin seeds

  • 5 curry leaves

Directions

  1. Cook rice according to package instructions.

  2. Heat oil, add cumin seeds, curry leaves, and onion; sauté until golden.

  3. Mix in pork curry, coconut milk, turmeric, and peas; simmer for 10 minutes.

  4. Combine with cooked rice; mix well and serve.

Cook’s Notes:

Hold back 1 cup of cooked biryani for the next day.


Day 3: Pork and Chickpea Stew

  • 1 cup reserved biryani

  • 2 cans chickpeas, drained

  • 1 tsp coriander powder

  • 1/2 tsp fenugreek seeds

Directions

  1. Heat oil in a pot, add fenugreek seeds until fragrant.

  2. Add onions, garlic, and ginger; sauté until onions are soft.

  3. Stir in chickpeas, reserved biryani, tamarind paste, chili powder, coriander, and salt.

  4. Simmer for 20 minutes, stirring occasionally.

Day 4: Coconut Pork Curry

  • 1/2 tsp cumin seeds

  • 5 curry leaves

Directions

  1. Heat oil in a pot, add mustard and cumin seeds until they crackle.

  2. Add onion and garlic; sauté until onion is soft.

  3. Add pork, cook until browned.

  4. Pour in coconut milk, chili powder, and salt; simmer for 30 minutes or until pork is tender.
