  • Salt and pepper to taste

  • 1 cup rice

  • 2 cups water

Directions

  1. In a skillet, heat olive oil over medium heat and cook onion and garlic until fragrant.

  2. Add ground turkey, cooking until browned.

  3. Stir in tomato paste, baharat spice, salt, and pepper. Simmer for 5 minutes.

  4. Cook rice according to package instructions.

Cook’s Notes:

Reserve 1/3 of the turkey mixture for tomorrow.


Day 2: Tamarind Turkey Wraps

  • Reserved turkey mixture

  • 2 tbsp tamarind paste

  • Pita bread

Side

  • 1 cucumber, sliced

  • 1 cup plain yogurt

Directions

  1. Mix reserved turkey with tamarind paste.

  2. Warm pita bread and fill with turkey mixture.

  3. Serve with sliced cucumbers and yogurt.

Cook’s Notes:

Hold back 1/4 of the yogurt for later.


Day 3: Turkish Dill & Potato Stew

  • 1 lb ground turkey

  • 2 potatoes, diced

  • 1 onion, chopped

  • 1 tbsp dill, chopped

  • 2 cups water

  • Salt and pepper to taste

Directions

  1. In a pot, heat olive oil and sauté onion until translucent.

  2. Add turkey and cook until browned.

  3. Add potatoes, dill, water, salt, and pepper. Simmer until potatoes are tender.

Cook’s Notes:

Reserve 1/3 of the stew for the next day.


Day 4: Chickpea & Turkey Rice Pilaf

Ingredients

  • Reserved stew

  • 1 can chickpeas, drained

  • 1 cup rice

  • 2 cups water

Directions

  1. Combine reserved stew and chickpeas in a pot.

  2. Add rice and water, bring to a boil.

  3. Reduce heat and simmer until rice is cooked.

Cook’s Notes:

Keep 1/4 of the pilaf for tomorrow.


Day 5: Lemon Turkey Salad

Ingredients

Main

  • Reserved pilaf

  • 1 lemon, juiced

  • 2 cucumbers, chopped

  • Remaining yogurt

Directions

  1. Mix reserved pilaf with lemon juice, cucumbers, and yogurt.

  2. Serve chilled or at room temperature.
