  • 1 zucchini, sliced

  • 1 red bell pepper, sliced

  • 2 tbsp soy sauce

  • 1 tbsp honey

  • 1 tbsp olive oil

Directions

  1. Heat olive oil in a large pan over medium heat. Add zucchini and bell pepper, stir-fry until tender.

  2. Add reserved pork, soy sauce, and honey. Stir well and cook until heated through.

Hold back a portion of the stir-fry for Day 3.


Day 3: Pork and Tomato Pasta

Ingredients

  • Reserved stir-fry from Day 2

  • 1 can tomato paste

  • 1 can canned tomatoes

  • 1/2 bunch basil, chopped

  • 1 lb pasta

Directions

  1. Cook pasta according to package instructions. Drain and set aside.

  2. In a pan, combine reserved stir-fry, tomato paste, canned tomatoes, and basil. Simmer for 10 minutes.

  3. Toss pasta with the sauce until well coated.

Day 4: Pork and Tomato Open-Faced Sandwiches

  • Leftover pasta sauce from Day 3

  • 4 bread rolls

  • 1 garlic clove, minced

  1. Preheat oven to 350ยฐF. Split rolls and place on a baking sheet.

  2. Mix olive oil and garlic. Brush on rolls and toast in the oven for 5 minutes.

  3. Top rolls with heated leftover pasta sauce.
