Day 1: Sheet-Pan Pork with Roasted Veggies

Directions
- Preheat oven to 400ยฐF. Toss potatoes, peppers, onion, and half the garlic with olive oil, salt, and pepper.

Lay veggies on a sheet pan. Form small meatballs with pork, mixing in rosemary, barbecue rub, and remaining garlic.

Place meatballs among veggies. Add lemon slices. Roast for 25-30 minutes until pork is cooked through.

Day 2: Pork and Veggie Stir-Fry

Directions
- Heat olive oil in a large pan over medium heat. Add zucchini and bell pepper, stir-fry until tender.

Add reserved pork, soy sauce, and honey. Stir well and cook until heated through.

Hold back a portion of the stir-fry for Day 3.
Day 3: Pork and Tomato Pasta

1 can tomato paste

1 can canned tomatoes

1/2 bunch basil, chopped

1 lb pasta
Directions
- Cook pasta according to package instructions. Drain and set aside.

In a pan, combine reserved stir-fry, tomato paste, canned tomatoes, and basil. Simmer for 10 minutes.

Toss pasta with the sauce until well coated.

Day 4: Pork and Tomato Open-Faced Sandwiches

Directions
- Preheat oven to 350ยฐF. Split rolls and place on a baking sheet.
