Day 1: Irish Shepherd’s Pie

  • 1.5 lbs ground beef

Topping

  • 4 lbs potatoes, peeled and quartered

  • 1/2 cup butter

Directions

  1. Preheat oven to 400ยฐF. Boil potatoes until tender.

  2. In a skillet, cook onions, carrots, and garlic until softened. Add beef, cook until browned.

  3. Stir in flour, then broth and thyme. Simmer until thickened.

  4. Mash potatoes with butter, cream, salt, and pepper.

  5. Spread beef mixture in baking dish, top with mashed potatoes. Bake 25 minutes until golden.

Reserve half of the mashed potatoes for Day 2.


Day 2: Colcannon with Leeks

  • Reserved mashed potatoes

  • 2 leeks, sliced

  • 1/4 cup butter

  • 1/2 cup heavy cream

Directions

  1. In a pan, cook leeks in butter until soft.

  2. Mix leeks into reserved mashed potatoes with cream. Heat through.

Cookโ€™s Notes:

Serve with buttered bread. Reserve some colcannon for Day 3.


Day 3: Potato Leek Soup

Ingredients

Soup

  • Reserved colcannon

  • 2 cups chicken broth

  • 1/2 cup heavy cream

  • Salt and pepper to taste

Directions

  1. In a pot, combine colcannon with broth. Simmer until smooth.

  2. Stir in cream, season with salt and pepper. Heat through.

Cookโ€™s Notes:

Serve with bread. Hold back 1 cup of soup for Day 4.


Day 4: Irish Beef and Vegetable Stew

Ingredients

Stew

  • 1.5 lbs ground beef

  • 2 carrots, sliced

  • 2 onions, chopped

  • Reserved potato leek soup

  • 2 cups chicken broth

  • 1 tbsp parsley, chopped

Directions

  1. Cook beef, onions, and carrots until beef is browned.

  2. Add reserved soup and broth; simmer until vegetables are tender.

  3. Stir in parsley before serving.

Cookโ€™s Notes:

Serve with peas. Reserve some stew for Day 5.


Day 5: Beef and Potato Frittata

Ingredients

Frittata

  • Reserved stew

  • 6 eggs, beaten

  • 1/2 cup cheddar cheese, grated

Directions

  1. Preheat oven to 350ยฐF. In a skillet, heat stew.

  2. Pour beaten eggs over stew, sprinkle with cheese.

  3. Bake until eggs are set, about 20 minutes.
