- 4 lbs potatoes, peeled and quartered

Directions
- Preheat oven to 400ยฐF. Boil potatoes until tender.

In a skillet, cook onions, carrots, and garlic until softened. Add beef, cook until browned.

Stir in flour, then broth and thyme. Simmer until thickened.

Mash potatoes with butter, cream, salt, and pepper.

Directions
- In a pan, cook leeks in butter until soft.

Mix leeks into reserved mashed potatoes with cream. Heat through.

Serve with buttered bread. Reserve some colcannon for Day 3.
Day 3: Potato Leek Soup

- Reserved colcannon

Salt and pepper to taste
Directions
- In a pot, combine colcannon with broth. Simmer until smooth.

Stir in cream, season with salt and pepper. Heat through.

Serve with bread. Hold back 1 cup of soup for Day 4.
Day 4: Irish Beef and Vegetable Stew

Reserved potato leek soup

2 cups chicken broth

1 tbsp parsley, chopped
Directions
- Cook beef, onions, and carrots until beef is browned.
