Reserve 2 cooked turkey thighs and half of the vegetables for the next day.


Day 2: Turkey and Vegetable Soup

  • Reserved turkey thighs and vegetables

  • 4 cups chicken broth

  • 2 potatoes, diced

  • 1 bay leaf

  • Salt and pepper to taste

Directions

  1. In a large pot, combine reserved turkey, vegetables, and chicken broth.

  2. Add diced potatoes and bay leaf.

  3. Simmer for 30 minutes, seasoning with salt and pepper to taste.

Cook’s Notes:

Hold back 2 cups of soup for the next day.


Day 3: Turkey Shepherd’s Pie

  • Reserved soup, strained

  • 2 cups mashed potatoes

  • 1 cup cheddar cheese, shredded

Directions

  1. Preheat oven to 400°F (200°C).

  2. Place strained turkey and vegetables into a baking dish.

  3. Top with mashed potatoes and sprinkle with cheddar cheese.

  4. Bake for 25 minutes or until the cheese is golden.
