Day 1: Braai-Spiced Roast Chicken with Grilled Veggies

  • 1 large whole chicken

  • 2 tbsp grill rub

  • 2 lemons, halved

  • 1 head garlic, halved

Vegetables

  • 2 bell peppers, quartered

  • 2 onions, quartered

  • 2 tbsp olive oil

Directions

  1. Preheat oven to 375°F (190°C).

  2. Rub chicken with grill rub, stuff with lemon and garlic.

  3. Roast chicken in a pan for 1.5 hours until golden and cooked through.

  4. Toss vegetables with olive oil, grill until charred.

Cook’s Notes:

Reserve half of the chicken for tomorrow.


Day 2: Apricot Chicken Stew with Couscous

Ingredients

  • Reserved chicken, shredded

  • 1 cup apricots, diced

  • 1 onion, chopped

  • 1 jar chutney

  • 1 can chicken broth

Base

  • 1 box couscous

Directions

  1. In a pot, sauté onion until soft, add apricots and chutney.

  2. Add chicken broth and shredded chicken, simmer for 20 minutes.

  3. Prepare couscous according to package instructions, serve stew over couscous.

Cook’s Notes:

Hold back a cup of stew for the next day.


Day 3: Chicken Stew Brioche Sandwiches

Ingredients

  • 1 cup reserved chicken stew

  • 8 brioche buns

  • 2 tbsp butter, melted

Directions

  1. Preheat broiler. Butter brioche buns and toast under broiler until golden.

  2. Reheat chicken stew, serve on toasted buns.

Cook’s Notes:

This dish uses up the reserved stew.


Day 4: Grilled Corn and Sweet Potato Salad

Ingredients

Main

  • 4 ears corn, husked

  • 4 large sweet potatoes, cubed

  • 1 bell pepper, diced

  • 1 bunch fresh parsley, chopped

  • 2 tbsp olive oil

Directions

  1. Boil sweet potatoes until tender, about 10 minutes.

  2. Grill corn until charred, cut kernels from cob.

  3. Toss sweet potatoes, corn, bell pepper, and parsley with olive oil.

A fresh and vibrant finish to the week.
