Day 1: Cambodian Lemongrass Pork with Jasmine Rice

  • 1 lb ground pork

  • 2 lemongrass stalks, finely chopped

  • 1 piece galangal, minced

  • 3 kaffir lime leaves, torn

  • 2 tbsp prahok

  • 2 tbsp fish sauce

  • 1 tbsp brown sugar

  • 1 red bell pepper, sliced

  • 1 onion, sliced

  • 3 garlic cloves, minced

  • 2 tbsp vegetable oil

Side

  • 1 cup jasmine rice

  • 1 lime, wedged

  • fresh cilantro, chopped

Directions

  1. Cook jasmine rice according to package instructions.

  2. Heat oil in a pan over medium heat. Add garlic, lemongrass, galangal, and lime leaves; sauté for 3 minutes.

  3. Add ground pork and cook until browned, about 5 minutes.

  4. Stir in prahok, fish sauce, and sugar. Cook for another 5 minutes.

  5. Add bell pepper and onion. Sauté until vegetables are tender, about 5 minutes.

  6. Serve over jasmine rice with lime wedges and cilantro.

Cook’s Notes:

Reserve 1/3 of the pork mixture for the next day.


Day 2: Pork and Coconut Milk Stir-Fry

  • Reserved pork mixture from Day 1

  • 1 can coconut milk

  • 1 tbsp fish sauce

  • 1 tbsp brown sugar

  • 1 red bell pepper, sliced

  • 1 onion, sliced

  • 1 tbsp vegetable oil

Directions

  1. Heat oil in a pan over medium heat. Add bell pepper and onion; sauté for 5 minutes.

  2. Add reserved pork mixture; cook for 3 minutes.

  3. Stir in coconut milk, fish sauce, and sugar. Simmer for 5 minutes.

  4. Serve hot.

Cook’s Notes:

Reserve 1/3 of the stir-fry for the next day.


Day 3: Fresh Pork Spring Rolls

Ingredients

  • Reserved stir-fry from Day 2

  • 12 rice paper wrappers

  • 1 cucumber, julienned

  • 1 lime, wedged

  • fresh cilantro, chopped

Directions

  1. Soak rice paper wrappers in warm water until pliable.

  2. Place a small amount of reserved stir-fry, cucumber, and cilantro in each wrapper.

  3. Roll tightly, folding in the sides to enclose filling.

  4. Serve with lime wedges.

Optionally serve with a side of soy sauce for dipping.
