  • 8 cups water

  • 1 tbsp fish sauce

  • 8 oz rice noodles

Directions

  1. Bring water to a boil in a large pot. Add reserved stir-fry and scallions.

  2. Stir in lime juice and fish sauce. Simmer for 10 minutes.

  3. Cook rice noodles according to package instructions. Serve soup over noodles.

Cook extra noodles and reserve half for tomorrow.


Day 3: Ginger Turkey Salad

  • 1 lb ground turkey

  • 1 inch ginger, grated

  • 2 large carrots, julienned

  • 1/2 cabbage, shredded

  • Reserved rice noodles

  • 1 tbsp fish sauce

  • 1 tbsp lime juice

  • 1 tbsp sugar

Directions

  1. Cook turkey with ginger until browned. Let cool.

  2. In a large bowl, combine turkey, carrots, cabbage, and reserved noodles.

Directions

  1. Heat oil in a pan. Sauté onion and garlic until translucent.

  2. Add rice and reserved spring roll filling. Stir-fry for 5 minutes.

  3. Season with soy sauce. Cook until heated through.
