Directions

  • 1 can cannellini beans, drained

  • 1 onion, chopped

  • 2 carrots, chopped

  • 2 stalks celery, chopped

  • 2 tomatoes, diced

  • 2 cups chicken broth

  • 1/4 cup olive oil

  • salt and pepper

Directions

  1. Heat olive oil in a pot, sauté onion, carrots, and celery for 5 minutes.

  2. Add tomatoes, beans, pork, and broth, simmer for 20 minutes.

  3. Season with salt and pepper to taste.

Cook’s Notes:

Hold back 1 cup of soup for Day 3.


Day 3: Tuscan Pasta with Pork and Beans

  • 1/2 lb pasta

  • 1 can cannellini beans, drained

  • 1/4 cup olive oil

  • 1 lemon, zested and juiced

  • 1/2 cup parmesan cheese, grated

Directions

  1. Cook pasta according to package instructions.

  2. In a pan, heat olive oil, add reserved soup and beans.

  3. Toss pasta with lemon juice, zest, soup mixture, and parmesan.

Cook’s Notes:

Reserve 1/2 cup of pasta mixture for Day 4.


Day 4: Pork and Potato Skillet

  • 4 potatoes, diced

  • 1/4 cup olive oil

  • 1 garlic head, minced

  • 1 bunch thyme

  • salt and pepper

Directions

  1. Heat olive oil in a skillet, add potatoes, cook until browned.

  2. Add garlic, thyme, and pasta mixture, cook for 10 minutes.

Cook’s Notes:

Enjoy with a simple green salad.


Day 5: Spinach and Pork Ciabatta Sandwiches

  • 1/3 cooked pork shoulder, shredded

  • 1 lb spinach

  • 2 loaves ciabatta bread

  • 1/4 cup balsamic vinegar

  • 1/4 cup olive oil

  • salt and pepper

Directions
