Directions

  1. Blend basil, pine nuts, garlic, 1/4 cup olive oil, and parmesan to make pesto.

  2. Cook spaghetti according to package instructions. Toss with pesto.

  3. Season steak with salt and pepper. Grill until medium-rare, about 4 minutes per side.

  4. Serve steak with pesto spaghetti. Reserve 1/2 lb steak for next day.

Day 2: Beef and Vegetable Stir-Fry

  • 1 red bell pepper, sliced

  • 1 zucchini, sliced

  • 1 onion, sliced

  • 1/2 cup frozen peas

  • 2 cloves garlic, minced

  • 2 tbsp olive oil

  • salt

  • black pepper

Directions

  1. Heat olive oil in a pan. Add garlic and sauté until fragrant.

  2. Add bell pepper, zucchini, onion, and peas. Stir-fry until vegetables are tender.

  3. Add reserved steak, stir-fry until heated through.

  4. Season with salt and pepper. Reserve 1 cup for next day.

Day 3: Bean and Beef Minestrone

  • 1 cup reserved beef and vegetable stir-fry

  • 1 onion, chopped

  • 1 red bell pepper, chopped

  • 2 cloves garlic, minced

  • 1 can cannellini beans, drained

  • 1/2 cup cherry tomatoes, halved

  • 1/2 cup basil leaves

  • 1/4 cup red wine vinegar

  • 1/4 cup balsamic vinegar

  • 4 cups water

  • salt

  • black pepper

Directions

  1. In a large pot, heat olive oil. Sauté onion, bell pepper, and garlic until soft.

  2. Add reserved stir-fry, beans, tomatoes, basil, vinegars, and water.

  3. Simmer for 20 minutes. Season with salt and pepper.

  4. Serve hot.
